Chilli chicken is a most sought-after, luscious indo-Chinese dish of chicken. It is important to point out that Chilli chicken is an Indian innovation in Chinese cuisine. This indo-Chinese delicacy is savored by majority of Indians. It bears no resemblance to any traditional Chinese dish. Chilli chicken got its spiciness from the generous use of green and red chillies and the crunch from the cornflower coating over the chicken. Chilli chicken has its own variation in accordance with area and people eating it. 

Some prefer Chicken boneless and others with bone. It is actually an easy recipe to try out for beginners. The ingredients enumerated below are required to prepare this delectable dish.

Ingredients for Chilli Chicken Recipe

  • 250 gms. boneless chicken breast.
  • 1 egg white
  • 4 tsp red chili sauce
  • 2-3 tsp corn flour
  • 1 tbsp. soy sauce
  • 2 tbsp. tomato ketchup
  • 1tsp white vinegar
  • 2tblsp oil
  • ½ tsp ginger paste
  • 1 tsp garlic paste
  • 1 big onion sliced into long pieces.
  • 1-2 green chillies
  • Green coriander and green onion for garnish
  • Oil for frying

Vegetables to be added:

  • ¼ to ½ cup bell papers or capsicum cubed
  • 1 spring onion chopped(OPTIONAL)
  • 4 to 5 celery chopped finely (OPTIONAL)

Preparation

Wash the chicken pieces. In a bowl marinate the chicken pieces in egg white,1 tsp salt, 2tsp red chilly sauce, and 2-3 tsp cornflower, maida, minced green chillies, ginger garlic paste and vinegar. Make a tight batter. Add water if necessary. Mix well and keep it aside for 10-15 minutes. 

Heat oil in pan and deep fry those chicken pieces for 2-3 minutes. Do not over fry and take them out on a paper tissue. 

In a separate pan heat 2 tbsp. oil and add ginger garlic paste, fry them until they attain golden colour. Add sliced onion pieces, capsicum cubes and slit green chillies. Do not overcook the vegetables so that veggies remain crunchy. Add red chilli sauce, soya sauce. You may add China salt as well. Usually in restaurants MSG is used to give unique flavor to this savory. 

Add Kashmiri chili powder or paprika and sauté them for few minutes over medium high flame. If you do not use enough chilli powder, the final dish may not get a good color. Ensure the gravy thicken and well coated the chicken pieces. 

Serve, garnished with slit green chillies, green onions, cilantro over rice or noodles. It can be served as an appetizer or along with fried rice, Schezwan fried rice, Hakka Noodles, Schezwan noodles.
