Fancy cooking a quick, simple, good-looking and a fusion dish in the new year? You might have your chances with this lip-smacking appetizer.


Stuffed tomatoes is a popular appetizer or a side-dish made in the western countries. While there are different ways to make it, we will create a fusion - best of both worlds.

Stuffed tomatoes: an appetizer with an Indian twist

Cooking time: 20 mins

Ingredients (serves 6 - 8)

Tomatoes - 8

Paneer - 10 tbsp

Chopped onions - ½ cup

Chopped green chillies - 2 tsp

Chopped, boiled veggies (carrots, green peas, french beans, cauliflower, capsicum) - 1.5 cups

Oil - 4 tsp

Pepper powder - 1 tsp

Salt - as per taste

Mozzarella cheese for garnishing

Instructions 

  1. Chop off the top portion of tomatoes and scoop out the pulp and seeds.
  2. Heat oil in a pan and saute green chillies and onions.
  3. Add in mixed veggies, paneer, salt, pepper and mix well. Let it cook on a medium flame for about 5 mins stirring occasionally. Allow it to cool.
  4. Stuff each scooped tomato with a portion of this mixture.
  5. Pre-heat the oven.
  6. Grease the baking tray, line the tomatoes and garnish it with mozzarella cheese. Bake at 200 degrees for about 7 - 8 mins.
