Making of Pulao:
1. Take a mixer and add coriander seeds to it. Grind into a coarse powder. Then, add the cardamom pods and grind until seeds are slightly crushed. Then, add the jeera, dalchini, lavang, and bay leaves pound very lightly for a few seconds, to mix.
2. Now, take a pan and melt some butter in it over a medium flame. Once the butter melts, add in the onions and saute for about 5 minutes or until softened. Then add the garlic and saute again for about a minute.
3. Now, add the turmeric powder and mustard seeds along with the ground masala. Mix well and let the masala cook for about 2 minutes. Then, add the rice and mix well. Add the vegetable or chicken stock along with a pinch of black pepper powder and some salt to taste. Give a good stir and then cover the pan with a lid.
4. Let the rice cook for about 15 minutes on low flame. Once the rice gets cooked, garnish with dollops of butter and chopped coriander leaves (if you wish to). Serve this yummy pulao with any gravy sabji or raita.
