Mysore masala dosa is unique with red chutney and potato masala wrapped inside.
Maddur vade are crispy delights. Maddur vade is made up of a mixture of flours, onions and green chilies.
Mandya mudde with Upsaru is a very nutritious recipe. Mandya mudde are ragi balls. Upsaru is like soup with green vegetables and sprouts.
Mangalore buns are close to puri. They aren't buns. It is a sweet puri with bananas in the dough.
Neer dose, are crepe-like dosas. It is made up of rice and coconut, grounded together. It is cooked on a griddle. These dosas are super white and soft. You can spice up this dosa with any curry.
Udupi hayagreeva maddi. This is a sweet delicacy of Udupi. This sweet is made up of jaggery, dal and coconut. There is a story behind this. A goldsmith kept on crafting a Ganesha head. But every time, he tried ended up in crafting a horse. He got disgusted and threw it away. Lord Hayagreeva, the horse incarnation of Vishnu appeared in Vadiraja's dream. The lord asked him to pick up the discarded figure and worship it. The Hayagreeva Maddi, was then prepared and served to the lord.
